Extremely entertaining read. You missed one very valuable tip, though: the walk-by spooning. This works for anything that can be scooped up with a spoon (you'll be surprised at what substances and how much of them you can scoop). The best location for these items is the walk-in (hence desserts are best suited for the walk-by). Just stick a spoon in your apron and scoop as you go. All I (and I assume any human being with even the remotest sense of hygiene and well-being) ask is that you use a new spoon for each walk-by.

Pasta and soup spoons are best for this, for obvious reasons.

I imagine walk-by forkings also work quite well.

As a former server/current manager, I've found numerous chuckles in this. Once & a while, I would hear some servers say, "I haven't had a good meal in days." And I'm thinking, "You work at a restaurant, shouldn't the perk be you shouldn't have to pay for food." I can't recall actually for food at a restaurant I've worked at... even that corny employee discount BS.

I now want to make sure all my staff never leaves hungry. That's just wrong and insulting.

This is a hysterical read and VERY accurate. No joke about it! I can't begin to tell you how many times I've 'squirreled away' my food to later on forget it and a week later find it covered in mold and stinking to high heaven. I have it all down to a perfect science on how to score free food and I eat rather well. Yes, aprons work well, and so do napkins which can hide precious tid-bits. I kiss but to all the decent cooks that aren't friends with the manager and it all works out very, very well, in ways you can't even possibly imagine. Ha
